Dinner Tonight?

Here is our Tofu, Giant Couscous & Roasted Mediterranean Veg Recipe. Enjoy!

Step 1:

Stick some coconut oil in a pan

Chop and throw in some peppers, aubergine, thinly sliced sweet potato and fry that lot up.

You can use any veg you like really, once the frying has begun add some spices, we used some ground black pepper and smoked paprika (love that stuff!!)

Step 2:

Take a block of tofu,

Stick it in a pan on a high heat with some coconut oil, you want those blocks to crisp up.

Step 3:

Whilst that's all a cookin' put your giant couscous on to bubble away (about 10-12mins) when they are translucent, turn the heat off.

Step 4:

Now stick it all in a bowl, wack on the coriander. stick some cottage cheese on top if you fancy some extra protein.

Viola!
